    Start with the salsa so the flavors have a few minutes to come together. Combine the diced mango, red onion, jalapeño, lime juice, and cilantro in a small bowl. Toss gently and season with a pinch of salt. Let it sit while you toast your bread.

    Spread a generous layer of Beetroot Hummus on each slice — don't be shy here, this is the foundation. You want enough that it holds its own against the salsa.
